My adaptation of one of the inaugural dishes, this is spicy, sweet and even a touch bitter from the molasses, but very nutritious. Makes 2 quarts, 16 servings of 1/2 cup each.
This is a delicious recipe for apple cider doughnuts from Recipegirl.com. I used mini muffin pans since I don't have doughnut pans.
The whole cranberries set this food to the WOW category. Bake uncovered so that the crust is crunchy
This is a healthier version of the traditional green bean casserole. It is under 10g. of fat per serving, and still tastes delicious. This may not be for "everyday" eating, but is fantastic for holiday dinners. As it only makes 6 servings, left overs are eaten up fast.

A creamy yummy way to add more vegetables to your diet.
This is a modification of Tal Ronnen's celery root soup, made over for low carbers. It's not vegan in this version because I use chicken fat and stock to replace the cashews, but you could make it vegetarian by switching out the chicken for cream &/or butter. The taste is sort of reminiscent of a good stuffing, and that is why I think it would be great as a first course for Thanksgiving, or any winter occasion.
Pretty easy to make, smells great cooking and has 3.3 g fiber and 4.2 g protein per 1/3 C serving!!

A friend served this raw stuffing wrapped in romaine leaves, and it was DELICIOUS! I'm not going to just save this one for Thanksgiving!
