One of my favorite easy things to throw together - the flavors are fantastic. Whatever looks fresh in the store is what goes in - sometimes rutabegas, turnips, various squashes, etc.
This was my mom's recipe. She didn't really use a recipe though. She just threw in what she had and mixed til it "felt right". Tasting all the way through the process to make sure the seasonings were just right. She would also drop it into mounds on a cooking sheet instead of one big pan and they would be these crispy "drop" dressings. They were wonderful.
Also, from this basic recipe you can add anything you like.... Sausage, turkey and drippings drippings, giblets, chicken pieces, pecans.... the possibilities are endless.
We call it Christmas salad, even though it's a variation of the recipe on the Ocean Spray package the berries used to come in.
My mom's ratatouille, a famous, French stovetop casserole with eggplant, tomatoes, zucchini and mushrooms. A carrot and red pepper add a hint of sweetness to the mix.
My dad makes this every year for Thanksgiving. I've tweaked it to be Vegan so we could bring it to Farm Sanctuary's Celebration FOR the Turkeys every November. It's delicious and everyone loves it, even picky kids.
Making your own bread cubes is easy and yields delicious results. You can prepare the toasted bread cubes two to three days before Thanksgiving; store at room temperature in a zip-top plastic bag. If there's space in the oven, bake the stuffing while the turkey roasts. Otherwise, bake it in the morning, and reheat it while the turkey stands.
An incredibly easy, really healthy dip! Just roast the squash and toss it all in the processor!
The consistency of the squash once roasted is smooth enough that lots of oil isn't necessary to hold the chickpeas together.
Also great as a sandwich spread - especially with leftover turkey!
