This is a variation of the apple sauce muffins used in the spark diet. They have about 15 more calories, but the blue berries add a lot of flavor and nutrition! I also doubled the recipe because I like to freeze them, and added some ground flax. Photo is from a chocolate chip/banana version (add 4/25/2012)
Canned beans are OK in this reecipe, but not quite as tasty as freshly cooked beans. Be sure to drain and rinse canned beans well to avoid excess sodium. And choose a low sodium brand of prepared salsa.
This is nutritious, healthy and delicious! You can substitute ingredients to your heart's content. I use red onions and white wine vinegar instead of lime juice. I also use sliced black olives (packed in water!)
This one, we will skip the oil... The raspberry flavoured vinegar is the essential and star ingredient here.
I redid an old favorite recipe. Actually used cauliflower, but broccoli could still be used. I calculated it for two servings, but that's a generous size, you could get 3-4 side dish servings.
