Quick frittata recipe. Any vegetables wold work well, for example zucchini, diced potatos, mushrooms, spinach, etc.
This is a nice dressing to add to a tossed salad. I use several types of lettuce, spinach, broccoli, cauliflower, carrots, tomatoes, green peppers, bunching onions, black olives, almonds or walnuts, just whatever you want. I also put in grapes or strawberries, halved or sliced to add some more sweet to it. Top it off with a low-fat cheese, such as Mozzarella, maybe a little sliced deli meat and you have a meal in one for less than 500 calories.
Quick, easy and tasty, loving raw garlic is a must, otherwise use 1/2 to 1 clove of garlic!
A modified recipe originally taken from Weight Watchers. The original version calls for celery instead of jalepeno, and only regular milk. I have also added the olive oil. This can easily be removed. Just saute the vegetables with a spray of cooking oil.
