I love pumpkin soup in the winter. I thought I'd share this recipe because everyone in my family makes it, it's remarkably low in calories (despite the bacon!) and it tastes great!

This dish is savory and hearty, sticks to your ribs, but is super-easy to make (I promise, you can't mess this one up) and employs mostly veggies. It's made with RED potatoes, BROWN rice, and GREEN beans... hence the name "colorful" stew. It's a great healthy substitute for boxed rice or pasta microwave lunches.
Feel free to add on or experiement with different types of vegetables. I just used what I had in my fridge at the time!
Don't worry too much about how you chop up the veggies since they will be pureed in the final step.
You chop the onion,bell pepper and tomato and put this in a small skillet with a few drops of oil. When these ingredients are a little cooked add yor egg and a pinch of salt.
