I was watching Sandra Lee Semi-homemade on Saturday and she made this dip. It looked so yummy I made it for my family. We used it for a healthy dip for celery sticks and carrots. OMG!!!!! try it you won't be disappointed!!!!
Love using fresh local produce, and never know exactly what to do with it. With this recipe I used zucchini and sugar peas...but will switch out to use eggplant, peppers, squash, and other local favorites as they become available...or instead of switching, add them right into the mix!
Please note, cooking time does not include cooking time for rice (I normally make several servings during the weekend to use during the week)

Adzuki beans (Japan) are mild and sweet-flavored. I buy them in the bulk dried beans section of my supermarket. Sometimes I use Zucchini instead of yellow squash. Salt or soy sauce to taste when served. The dish is colorful. I sometimes omit the whole cloves or use regular brown rice instead of the basmati.

Easy enough to make in a microwave that I make it from scratch for lunch at work. Just bring a ziplock with some veggies, the dashi, miso and an egg.
