Adapted from Mark Bittman, this uses canned San Marzano tomatoes for optimum flavour in the dead of winter. When pureed with carrot, onion and garlic and swirled though with basil leaves, it will warm you right through your toes!

Adapted from the upcoming Newlywed Cookbook to add all the veggies "beginning to die" in the house and use brown rice stick noodles. This is creamy, spicy and packed with nutrition! It's also good warm or cold, making it great for lunches.
The heat from two kinds of fresh peppers gets mellowed out by cooling lime, sweet tomatoes and buttery shrimp. I definitely recommend using fresh, in season tomatoes for this, right off the vine cherry tomatoes from your own backyard if possible! Adapted from Weight Watchers.
A light, saffron-infused sauce with fresh tomatoes, mussels and garlic enrobes chunky spiral pasta and green beans. 36 mussels are about 1 1/2 lbs in-shell.

Wheat (but NOT gluten), nut and refined sugar free, these vegan chocolate cupcakes are given a delicious dose of cherry juice and a touch of balsamic vinegar for an added boost. Pureed black cherries help lower the fat content and add to the flavour too! A not too sweet cocoa frosting caps them off, and their tiny size keeps the guilt low too! A bonus is that all the cupcake prep can be done in a food processor
High protein, low sugar, cheesecake cups with a vanilla flavour. Added protein with vanilla protein powder.

For presentation, I ringed the bottom with dark Belgian chocolate wafers and topped the whole lot off with chocolate covered cherries!
A hybrid ice cream and frozen yogurt, made for my junior Home Economics class this week. How can you say no to cake batter and sprinkles?
WHEN YOU BUY PRE-MADE PIZZA, YOU CAN'T HELP BUT TO LOOK AT THE LABEL & THINK ABOUT THE CARBS & CALORIES. THIS PIZZA IS LOW-MAINTANCE & EASY ENOUGH FOR KIDS TO DO, PLUS YOU CAN MAKE THIS RECPE YOUR OWN & MAKE IT EVEN HEALTHIER THAN I DID!
This tangy, lightly dressed salad of mixed lettuce (iceberg for crunch, romaine for classic flavour) and combined crab leg meat and surimi is the perfect meal for two. I don't like croutons or cheese, bu go for it if that's your thing.
A springform pan is the perfect vessel for this giant, chewy, Snickers-filled chocolate cookie. A dusting of sugar on the top adds a little extra sweetness, since there's only 1/3 cup in the dough itself!
