The package of Green & Blacks dark cocoa is a must.. most are not dark enough, even Sharfenberger's, to make dark choc cupcakes. The pkg of Green & Blacks is 150gms.. and sold at Whole Foods, but if you don't have or can't get it, then use the darkest cocoa you can find, and use 1.5 cups.
My sister invented this: it is a combination of my brother-in-law's tuna recipe and my sister's rotini recipe and the result tastes fantastic! (It ought to, since it's high in calories, so keep that in mind. ;))

Small chocolate GFCF cake I adapted from a common egg-free/dairy free chocolate cake recipe for family celebrations to be baked in small glass bowl to create small round cake. Smaller servings and replacing some of the sugar with xylitol help reduce the carb load of the gluten-free flour blend.
This is a version of Texas Sheet Cake (delicious!) modified to half the usual calories, and put in cupcake form for portion control.
I was watching The Biggest Loser while working out, this morning, and these cupcakes (ala Curtis Stone) seemed like a wonderful thing to bake for my friends at work, today!
Salad with lettuce, spinach, olives, tomatoes, cucumbers, and a little balsamic vinagrette tossed in. Top with feta cheese and you've got a delicious nutritious italian style salad, only 50 caloriesa serving!
