I modified and smooshed together a couple different recipes to come up with a lower sugar, super tasty muffin full of nutrition!
I modified I recipe that I found online to make it a little healthier. One option is to use applesauce instead of the eggs (about 1/2 cup for 3 eggs)
My husband surprised me this morning by making some muffins from my 1955 Betty Crocker cookbook. After pitching a fit because I didn't know if I could eat them, I figured I should find out how bad they are for me. Nutrition info is for 9 muffins because that is how many DH made this morning out of the batter. But, you could and should make 12 more reasonably portioned muffins out of the batter should you try these. But, they are quite good! Worth the calories for a brunch.
Make these once and you have breakfast for 8-16 days! Freeze them, then pull out one or two and pop them in the microwave! FAST Breakfast!
This recipe makes 12 good sized muffins. They're easy to grab and go when I need a meal on the run and I don't get hungry again for a couple of hours!
Excellent with fat free English Crumpets, cucumbers and tomatoes!
You can make it more low fat by using non fat sour cream and/or cream cheese or blend in some cottage cheese.
I wanted to use items that wouldn't parish right away and would be relatively easy to make, so I used Dr. Praegers frozen sweet potato pancakes, Alexis hashbrowns and frozen chopped collard greens. They are pretty tasty but even with the hefty amount of olive oil, they didn't turn out as crispy as I would like. It could be how thick they were or still too much moisture, I don't know. But they were still delicious! Any tips on how to make these better is always apreciated!
What to do with leftover corned beef. I realized I probably could gotten away with less olive oil or even spray oil and saved alot of fat calories.
Wanted something quick and easily portable. Serving size is 2 cups. (Please note, these may not be considered vegetarian to some folks, but the Main Category didn't have any appropriate options.

A great breakfast or light supper food. Add extras if you wish, like raisins, coconut, nuts, etc. Eat plain or with milk.
The original recipe had 1/2 cup oil, 1 cup sugar and 2 eggs, so the calories & fat have been greatly decreased.
Make it chocolate oatmeal by adding 1/4 cup of unsweetened dry cocoa to the mixture!
