This is an upside down recipe. The topping goes on the boottom of the pan and the pancake batter goes on top of it. When served, turn the "pancake" upside down to serve.
I've been eating whole wheat pancakes for a while, but since going vegan, had to figure out how to modify the recipe. These are simple to make, low in fat, and pretty tasty. I like adding mix-ins like raspberries and walnuts for a little something special.
This is a hearty but low fat meal for lunch or brunch; you can eat it with whole wheat pita bread too.

Kitchenaid Mixer
Pastry Blender
Measuring cups, spoons.
Preferably a french rolling pin (no handles)

Preheat oven 350 degrees convection Mix cereal, 2c. Milk and set aside until all liquid is absorbed. Combine egg, 1/2 c. Milk, vanilla, maple syrup. Beat with a fork. Add liquid mixture to cereal mixture. Combine dry ingredients. Mix dry mixture into cereal mixture until well combined. Fold in chocolate chips. Fill 20 muffin cups 3/4 full. Bake approx. 25 minutes.
New twist on lasagna without pasta or ricotta mix. Parmesan used but can be omitted to be vegan.
Serve this for any meal. It is packed full of potassium and Vitamin A. Your family will not know they are eating healthy!
This recipe is quick and easy. It is both vegetarian and vegan. If you have access to "no chicken/chicken broth this is what I use all the time. You could also use Thai broth or chicken broth.
