You can substitute different fruit in these, but keep the volume consistent and type for type... eg fresh or frozen blueberries for apples, or dried blueberries or raisins for craisins. You can also substitute mashed banana for applesauce, and change out the cinnamon for something else if you want. Nuts would also make a great addition. The streusel topping is totally optional. Banana with peanut butter and bacon bits would be awesome.

FYI - I have had success with using 1/2 whole wheat flour and 1/2 white flour. If you do this increase your batter resting time to 1.5 hours.
