This souffle tastes and smells divine! The bright green coulis sauce just makes me think of spring. The portions are large. It could serve 6 at a brunch with other sides, but it is great for any meal of the day.

My husband and I love this for a weekend brunch, but it is easy and quick enough for a weekday.
I make this on Christmas eve and put in the oven while we open presents then my boys eat it up! I slimmed it down a little w/ skim milk, lowfat cheese, lite sausage and a lower calorie bread.
This is a very nice appetizer, but may also be used as a light lunch.
As an appetizer, it serves nicely with broiled Halibut or steak.
As a light lunch, serve with 5 or 6 crackers.

yum..this is low carb, high fat...and just...yum. I didn't include everything she did and made it smaller. We don't eat it fast enough for the big one.
This is a great basic quiche recipe. You can easily alter to your preferences. Choose bacon and swiss or spinach and mushroom or brocoli and ham. The combinations are endless.
Put it together in 10 minutes and wait for the smiles when it comes out of the oven. You can choose ham if you prefer. I used what was in the fridge. Also, you can add frozen, drained spinach, tomotoes, fresh mushrooms. Whatever sounds good can be thrown in.
These are a delicious, great way to start your day. They really fill you up and keep you full. Easy recipe just dump and stir only one bowl required. Switch up the fruit and nuts to match your taste. We sometimes use pearsauce (instead of applesauce), crasins and blueberries, so yummy.

Tastes great, and it's vegetarian! This was supposed to be an omelet, but I forgot to spray the pan first, so I had to move it around and it ended up being scrambled eggs...still good though ;D
