I originally "discovered" crustless quiche [fritatta to some] in a murder mystery series that included recipes used by one of the characters. Don't worry, she was the good guy! Try various fillings but stick with Gruyere cheese, the flavor is the best. The reason I make it as a whole pie is that the presentation is beautiful and gives the impression of abundance. Beware- you'll be hard pressed not to eat more than 1/6 of the pie!
