This is hands down the best carrot cake ever! The orginal recipe is from Tammy Elliott on allrecipes.com...It has been tweeked by me and hundreds of others. I tweeked down the fat/calories so I could enjoy it more than 1 time per year.

My take on JUDY2702's muffins to die for - I eliminated the crumb topping, substituted applesauce for the oil, and Silk plain no sugar added soymilk for the milk. And made big ones (only 10 instead of her 12).
Break up Italian Sausage and brown, add onions and chopped zucchini and cook until soft. Stir in grits and seasonings. Spray a 9 X 9 pan and add sausage mixture. Sprinkle the chopped roma tomatoes and green chiles on top. Whisk the eggs and milk together and pour over mixtures. At this point, you can refrigerate overnight, or proceed to next step. Sprinkle with Parmesan cheese and bake in a 375 preheated oven for 25-30 minutes, or until golden and puffy and knife comes out clean.
