This is a rice dessert that my Memere made at the holidays for the family. There is rice, whipping cream and crush pineapples in this easy recipe.
Prepare in the even and refrigerate overnight. Next morning pop it into the oven for a real breakfast treat
I decided to make a holiday-inspired breakfast salad on Christmas morning. If I were to add anything else, it would be a little unsweetened coconut. I used frozen blueberries, but I think fresh ones would be better, especially if you want to prevent the pineapple from turning dark in the blueberry juice.
This is ok but needs more chocolate and splenda for my taste. Not overly sweet but not bad.
This appetizer (adapted from Christmas with Southern Living 2000) is great toasted on the baguette with feta or eaten cold with whole grain pita chips. Even great for topping grilled chicken.
