Great salad as an entree or as a side. Also good as a topper on a "grilled portabello mushroom" sandwich.
Great salad - takes about 20 mins to prep - and then CHILL in fridge for an hour.
This is great with chips, or on a grilled burger or chicken breast - yummy! You can even put a be scoop on a bed of your favorite greens for a salad.

You also need one small jalepeno but it wouldn't let me add it. The jalepeno needs the ends cut off and then sliced in half, then the seeds cut out and the inside veins scraped out. Throw seeds, skin and ends away and chop it up into very small pieces.
this is my favorite salad ever, its my aunt's recipe but i've altered it to make it healthier! i had a hard time figuring out the nutritional values so the calories on the right are higher than i usually make it, because i use all non fat dairy items, and its just as fabulous! warning: this salad is HOT so if you don't like heat reduce the amount of chipotle paste... enjoy :]
This is a great little salad that you can serve cold on a hot day and have some garlic bread nearby to eat with this along with a nice green salad.
