(NB. This can also be made on the stove top, wash and drain the rice and continue as per recipe, only instead of pouring it all into an oven proof dish, cook in saucepan. It will need continuious attention, stirring occasionally this way though, so as to ensure it doesn't burn or stick to base of pan.)
I made this for the first time yesterday and took it to my daughter's girl scout meeting...there was only 2 slices left by the end of the meeting, and hubby ate those as soon as I got home with it! every one loved it!
This is a modified Pinterest/internet recipe. Every recipe I've seen has left the apples intact and makes for a denser cake. I still want the light and fluffy qualities of the angel cake (that's the appeal of angel food, isn't it?), so I pureed the apple filling and added it to the cake mix and used a hand mixer per the box directions.
I was craving peach cobbler but was drying to be good nutrition wise and calorie wise. This was an experiment lol that turned out pretty okay :)
After calculating the nutritional info...I'll say that this is healthier than most lol

Recipe makes 24 mini cupcakes plus one Bundt cake of 9" diameter (28.274" circumference). This calculation disregards the mini cupcakes and assumes a 28" circumference for a worst case scenario and does NOT include icing.

I used applesauce for one cup of the butter and whole wheat flour and also extra dark chocolate. They are delicious!
