Additional Suggestions:
Instead of carrots add chopped, cooked shrimp or use baby bay shrimp.

I made this is a bread machine set on gluten free setting, but it would be best hand made with single proofing.
This soup relies mainly on it's sweated shallots, leeks and onion for it's base flavor. I used predominately green vegetables, as this recipe is an off-shout of Kirstie Allie's Green Soup Recipe (which can be found on Oprah's web-site...or my recipe file) and I just tweaked it a bit by adding other things from my refridgerator that wanted to jump in (well...let's be honest...they needed to be used.) I thought they would compliment that particular recipe...hence: Mama Christine's Soup du Jour.
