This tagine was inspired by several yummy versions I've had at the homes of friends of mine - friends from Morocco, Algeria, Tunisia, Egypt - everyone seems to have their own variant.
I cook this dish in a tagine (a special container - that one with the cone-shaped lid), but have also made it in a regular, large, sauce pan. I believe it would also work in a slow cooker, but haven't tried that.
I've used a whole chicken, cut up, but feel free to use only chicken breasts or thighs. Personally, I find that bone-in chicken is *way* more flavourful, but your mileage may vary.

This is a great alternative to pancakes or waffles for those with wheat/gluten allergies. I love to top then with cooked apples and drizzled with a bit of honey. Yum!

This pancake recipe uses Bob's Red Mill Gluten Free Pancake Mix, and adds an extra protein punch with the addition of whey protein.

Remove sausage from casings and cook in a large soup pan over medium heat with 1 TB of olive oil. Stir frequently to evenly brown and crumble the sausage. Add onions, leeks, garlic and the rest of the olive oil and cook until softened. Add carrots, squash and lentils and cook a few more minutes, stirring to incorporate flavors. Add dried or fresh parsley, bay leaves, salt and pepper to taste. Pour in chicken or vegetable broth and add chopped ham. Stir and add a lid. cook over simmer for 1 1/2 to 2 hours until lentils are cooked and vegetables are soft. Add more broth if necessary. Serve with a sprinkle of cheese and a drizzle of olive oil if desired
