this is a great high protein meal in less than 30 minutes....tastes like to spent the whole afternoon slaving in the kitchen! Serve it over some whole wheat pasta
This recipe is one I adapted somewhat from one I found in Real Simple magazine. It's pretty tasty and not to bad for you.
Slice a small eggplant (I use a chinese eggplant) into 3/4 inch slices. Grill in small amount of water on both sides. Top with very thin slice of mozzarelli, slice of green pepper (I use pablano peppers for extra punch), sprinkle on half of the parmesan. Add the diced tomatoes, and rest of parmesan. Cover and cook on low about 15 minutes. Serves 4 four.
I make my own just cause I dont like the 500mg of salt in a .25 cup of sauce. for a .5 cup of this is only 31mg of salt
Tomato/beef based broth with veggies & orzo pasta - I used home canned tomatoes & zucchini with garlic pieces - & tiny meatballs - wonderful soup that can satisfy as a meal.
