I am trying to add vegetables to my diet and this is the stuff I had on hand. It was delicious. Some of my measurements may be off. I'm adding it on here because my skinny husband had 2 helpings and my picky 3 year old ate almost everything. Its worth trying to add some veggies in. =D
This was originally a vegetarian recipe however it has been adapted for those meat lovers like my son and his father. If you want to make the vegetarian version add another 8oz of mushrooms and saute the mushrooms in 2 tsp of olive oil.
