My son and I have liked pickle salads for years! It's a nice way to introduce more salad ingredients to pickier kids--since most kids like pickles! (It's higher in sodium than most salads though--be careful if watching sodium)

This is a copy of the recipe on here called "Oatmeal Applesauce Low Fat Cookies ". I didn't use Splenda, and didn't have as much Craisins as it called for, and used regular sugar over brown, so I wanted to get a more accurate calorie count.
I adapted this recipe to be dairy free from a magazine one. I found it a bit sweet- next time I'll use about half the quantity of splenda. You could replace the splenda and molasses with 1/2 cup (or less) brown sugar, if you prefer.

This a biggest loser recipe that I adapted to what I had in the kitchen. I only counted a 1/4 cup of the bread crumbs because I threw away 3/4 cup of the bread crumb mixture. This would make good chicken nuggets, it was a big hit with my kids. I counted as 8 servings because the chicken breasts I had were extremely large. A very good replacement for Shake and Bake, but healthier.
