I have a friend that makes the most awesome cheesy potatoes. I am trying the South Beach Diet and decided to try this with cauliflower. I don't think I'll ever have it with potatoes again! I would use 2 heads of cauliflower instead of 1. Usually I use a whole bag of frozen hasbrown potatoes to a tub of sour cream, but the cauliflower did not yield as much as the potatoes. Also, my friend usually used a can of cream soup to make it creamier, but I just used a couple of tablespoons of cream instead to keep carbs down. I will be revising this for be lower in calories and fat next time.
Although this recipe calls for pork sausage, you could also substitute turkey sausage or even vegetarian "sausage" made from soy. Also feel free to use more garlic if you wish.
This is a variation on the South Beach Diet Vege Quiche Cups. I think the mustard greens provide more taste than frozen chopped spinach.
