Low carb soup, thick and tasty. Typically, such a soup would be thickened with potato; pureed cauliflower makes an excellent low-carb alternative, adds excellent texture and flavor. The only thing about this soup is that you have to pay attention at the beginning, until you've added the broth. Both garlic and cabbage will easily burn if you don't pay attention and the burnt flavor will permeate the soup. If you happen to burn them, you'd best toss and start over, or make something else, like a hash maybe?
This is a savory broth that you can use as a base for many different soups and dishes. Add pork or chicken cubes and hominy and have a green chili stew. You can also use as a marinade for meats then grill. You can also take a cup and reduce it down to use as a sauce on meats or over meatloaf. Very good.
We had a crawfish boil and I used most of the leftover ingredients to make this stew. Picked all the tail meat from the crawfish and made sure to get all the yellow "fat" from the heads. This adds awesome flavor. Had 2 ears of corn left so cut the kernels from the cob and took the andouille sausage and put it in my food processor to chop fine. If you don't have all these left overs it is very easy to make from scratch.
This quick-to-make 'casserole' will feed a lot of hungry people. I invented this through experimentation.
