Put one bundle of bean threads in a medium size bowl. Pour boiling water over bean
threads, let sit for twenty minutes.
Toss the veggies and herbs with vinegar, add salt. Let these sit and marinate while the
bean threads are softening.
Pour off water on bean threads, sprinkle with rice vinegar, toss together with veggies.
Serve cold
