My grandmother told me that the perfect Turkey Sandwhich was mayo, salt and pepper, and turkey on toast. This is a close second.
I find this a satisfying salad and I often have it for lunch. The vegetarian "chicken" can be substituted for a vegan product. I used the Veggie Patch Chick'n Nuggets in this version, but I have used the Quorn brand Chick'n nuggets as well.

This rice my mother taught me to make as a kid, I normally add in frozen veggies but mood determines type (frozen mixed veggies, frozen broccoli and spinach all work great!)

I made this soup last night to use up some beautiful kale I received in my CSA share. The Chorizo was an afterthought after I put the original soup on the site and decided it didn't have enough protein.

I am trying to be creative during the blended phase following gastric sleeve surgery. I love egg salad, but never make it for myself. I'm thinking this will be a tasty high-protein meal that won't look bad when blended smooth. Only thing missing is bread (Not allowed at this stage)
