Inspired by RZ #268335. I lightened it up a bit and made it a bit easier to accomplish and a little more flavorful.
These muffins taste deliciously hippy and wholesome. Filled with bran goodness and dried fruit they are a hearty start to the day or a great snack for any time.
This is an altered recipe from the Better Homes and Gardens Cookbook. It uses ready-to-bake/no-boil gluten free rice noodle in the place of normal lasagna noodles and it tastes GREAT! We also recommend the sauce used in this recipe to ensure that it remains gluten-free. The use of weight-watchers cheese, 98% fat free ground beef, and egg beaters lowers the fat and calories considerably.
I created this recipe by tweaking an old favorite pancake recipe. These are much better than the old version.
Makes 8 enchiladas...double the nutritional info and have 2 of 'em and you're still being pretty good. :D

This receipe was revised from one I found at kraftfoods.com. They used ground skinless chicken breast but I prefer turkey. I also prefer the Tostitos Gold Tortilla Chips - they don't get as soggy and add a crunch.

Our very own Station 2 won the 2003 Austin Fire Department’s Healthy Wagon Contest with this very healthful and tasty lunch/dinner wrap. The judges included three experts—the Fire Department’s in-house health specialist, a local representative from the American Heart Association, and a member of the Mayor’s Council for Physical Fitness.
The department also sponsored an awards presentation at which we received a little red wagon, a healthy low-fat cookbook, a salad spinner, and fifty dollars to use for a future healthy wagon.
This wrap also makes an excellent dinner.
