Lamb stew is Irish penicillin: a rich stew full of potatoes, leeks and carrots that’ll cure whatever ails you. In traditional fashion, nothing here is browned first, just all stewed together. To keep it healthy make sure to trim the lamb of any visible fat before you cook it.
This is very good over brown rice. I didn't have any cornstarch in the house, so I used Wondra flour, which worked perfectly. Very easy and tasty!

Mixture of what was in my cupboard that turned out kinda tasty. May turn out soupish depending on how much juice is in your tomatoes. Serve it as a soup or use a slotted spoon to dish out.
A healthy version of stuffed porkchops. You get a full serving of vegetables in each porkchop. These porkchops are juicy and very filling.
