A healthier way to eat Macaroni and Cheese - with added veggies you can hardly tell are there!
Delicious, light lunch or entree with fresh, mediterranean flavors. Seasonings and herbs should be adjusted to your personal taste, however, be careful not to overpower the dish. It is meant to have delicious, subtle flavors and no flavor should dominate.
I have added this as a vegetarian dish but if you want to add some grilled chicken or fish, it would be delicious and very easy to do.
This is a simple and very healthy version of a classic salad - and it's got protein, carbs and veggies. Very well rounded!
Very close to what you can find in any Chinese restaurant in Ireland (although they use sticky rice and prawns, and deep fry it).
Louisiana's Best with an Italian Irish twist.
Easy and fast to make. No cooking. This salad can be put on bread for a sandwich or it can be used to stuff a fresh tomato.
I question if this has the nutritional value accurate. I'm sure it's thinking I'm actually eating 1/2 of syrup but it's just the marinade. If anyone has a suggestion I'd love to know.
Nutritional value does not include brown rice.
This is my take on Maggie Ruggiero's Fish with Creamy Leeks from Gourmet Magazine, November 2007
Tuna Noodle casserole made with a sauce of sweet potatoes, cottage cheese, and chicken bouillon.
This delicious simple tuna spread is perfect for sandwiches. Topped with some of your favorite cheese it is a delight that can't be compared to anything else in the universe. It's that good! Served between two slices of my homemade wheat bread (see recipe) and you'll think you've died and gone to Heaven!
I played around with Linda Sue's Tuna Patty recipe (http://www.genaw.com/lowcarb/

ties.html) and really thought spinach would work in a tuna burger. It does! Enhanced nutrition for almost no additional carbs or calories, and it improves the visual appearance too. Bet your kids won't mind eating their veggies like this! If you make this recipe, please do leave a comment, I would really appreciate it. Thanks for stopping by!
I have been trying to eat a very high fat diet lately due to research I have read about this WOE, and so I am now trying to get 70% of my daily calories from fat. This recipe really helps in that department! Obviously not for anyone doing low fat, so please spare me the comments. :-)
the nutritional info may be misleading because the marinade is tossed and not eaten. I don't know how to compensate for it.
