This recipe is quick and easy! I think the most important thing to consider when counting calories in this dish is the SAUCE you use. I used Target's brand, Archer Farms-- others I found in the food database were considerably higher in fat and calories. If you use a different brand, try to find something comparable to 70 cal/ 6g fat per 1/4 cup.

This is inspired a recipe from the book "The World's Healthiest Foods" by George Mateljan. I've used different fish and vegetables, but used the same cooking technique. This is such a clever technique that produces a 'no-stick' fritatta without oil - fantastic!
