This is made with Smart Balance light and Rice Milk instead of the normal butter and whole milk. Save 30 calories per serving and 4.2 grams of fat.
Delicious soup...original recipe called for whipping cream which I substituted with 5% cream, and I used skim milk. Also the original recipe called for fish stock, which I could not find, so I used vegetable broth. It was very good but a bit salty. If you use a reduced sodium vegetable broth you could reduce the sodium.
This is a remake of a Paula Dean recipe. My hubby and I just love this. The tilapia is not fishy and the topping is very rich with a slight kick. This dish is also high in protien.
