Recipe from Sparkpeople Cookbook. Changed whole wheat noodles to Brown Rice noodles, and used Progresso bread crumbs instead.
My favorite adaptation of the Spicy Tuna Cakes from Nom Nom Paleo - these have neither jalapeno or cilantro, but still sweetly spicy.
Drain tuna, chop eggs, chop celery and add all ingredients plus pepper and paprika. I make lettuce wraps.
This is a light dish that I found on The Food Network sight. I used light butter but it called for unsalted butter. I use I/3 cup of cheese but it called for 1/4 cup.
You can substitute any other meat/fish you desire, just change up the calculations for nutrition.

This tuna salad is so tasty and light. The added pickle and celery add a nice crunch. Feel free to increase the spice amounts to taste. Perfect on crackers for a party, ideal for mini sandwiches or pile into a wrap. To avoid carbs, top off a bed of lettuce and enjoy!
