Family Favorite that is actually healthy. Always a favorite in our house. Great with some buttered bread!
This is my embellished version of tuna salad. This has a slightly sweet flavor due to the balsamic, and the garlic, cilantro and jalapeno stuffed olives give it a little zest.

This is a very good way to serve vegetables and tinned tuna - its tasty and moist and makes a complete meal..
N.B. 500g firm white fresh fish fillets, skin removed and cut into 2cm pieces, can be used instead of the canned tuna.. Ensure it is fully cooked before putting into casserole dish.
Shown in the second photo served with Bubble and Squeak Wedges for an easy nutritious lunch.
A quick microwave meal for busy people
Instead of white fish you could substitute salmon,smoked cod or well drained canned fish.

Or do as I did - make 4 pasties using half the filling and half the pastry and use the rest of the filling the next day as a Fish Casserole. Bingo!! 2 great meals from one recipe!!

Salmon marinated in a brown sugar, bourbon whiskey and apple juice marinade and served with toasted pecans.
Great on a sandwich or as part of a salad. Not too wet or too dry. If you need a little more mayo, it is only 15 calories per Tablespoon and very low in fat.
