I like spending Sundays in the kitchen making healthy snacks and freeze blue lunches for the days ahead. I made this hummus because I hate not knowing exactly what goes into my food, it's simple, quick and delicious. You can use canned chickpeas and jarred roasted red peppers if you'd like a quicker snack. I opt to make my own so I know that nly wholesome ingredients are used :)
Hummus is a fantastic dip for raw vegetables, sliced apples, crackers, toast, crisp bread, flatbread or tortillas. It is also a great topping for rice, cooked vegetables and for pita or pocket sandwich filling.
This low fat hummus starts with a 9-serving box of Fantastic World Foods Original Hummus. I added a can of Luck's Fat Free Great Northern beans.
The listed serving size is 1/4 cup. I enjoy eating a half cup and using it as an entree.

This salad uses fresh fruit that is easily available late in the season (autumn in the northern hemisphere), along with dried and canned fruit. It will taste best after it has soaked for several hours or overnight.
A serving is a heaping one-cup measure.
Optional additions:
Medjool Dates, Flaked Coconut
Mini Marshmallows, Guava
Pineapple - Crushed or Chunks
Lemon Juice and capers add zing to this vitamin and protein-rich salad
Cool, refreshing, and decidedly healthful, this is my absolute favorite drink. I despise coffee, and I find this gives just enough caffeine in the morning to gently wake me without giving me jitters. I prefer it iced, but you could just as easily serve warm.

Matcha is ground green tea leaves native to Japan, used in tea ceremonies there. You know the health benefits of green tea everyone has been raving about? 1 tsp of matcha is as beneficial as up to 6 tsp of brewed green tea leaves because you actually eat matcha powder instead of tossing it away after brewing.
Get yourself a decent matcha powder. Check your local asian supermarkets. Find a container sealed with a vacuum/nitrogen lock. Make sure it is grown in Uji for best quality. "Thin" Matcha is fine for this drink and other recipes.
