This was originally a sausage dish that I make, but I replaced the smoked sausage with chicken to make it lighter and healthier!
This crock pot (slow cooker) chicken stew is wonderful served with whole wheat biscuits. It would also be great with onions in it, but my BF is allergic and can only tolerate a small amount of onion powder. I use whold baby carrots because they are easy, but you can substitute large carrots, peeled & sliced.

I substitute 4 oz water and 4 oz of salad dressing compared to the recommended 8ox of salad dressing. It helps decrease the fat and sodium per serving.
If you don't have Tastefully Simple, well, you should get a consultant LOL! But, you can substitute any generic type seasoning salt and spicy seasoning mix for the Tastefully Simple products.
I cut the breasts in half to produce a thinner cutlet vs. a thicker breast.

.com/ - Great stuff there. I lightened this up a little, made it easier on myself to digest (dark meat vs. light) and adjusted the veggies to better suit DH's taste (whose nose still scrunched up at the peas. lol)
3 cups fat-free chicken broth
1 1/4 cups finely chopped celery
1/2 cup diced sweet yellow onion
3 cups green enchilada sauce
One 15-oz. can pure pumpkin
10 oz. cooked boneless skinless lean chicken breast, chopped or shredded
1 cup frozen white (or yellow) corn
Optional: dash hot sauce, or more to taste
Optional toppings: shredded fat-free cheddar cheese, crushed baked tortilla chips

Smoked turkey sausage is a great alternative to fattier pork sausage, yet has plenty of savory flavor. Adding a couple of handfuls of fresh basil to the dish gives it great flavor and aroma. A sprinkling of freshly grated Parmesan or Asiago is the perfect salty finish to a great family dinner.
