Some members of my family wouldn't eat salad unless it was drenched in heavy dressing, loaded over-the-top with bacon, eggs, cheese, and croutons until there was more topping than lettuce! This salad packs a flavor so good the bowl is scraped clean every time by those same people. I like using salsa as a substitute for traditional dressing because it's lower in calories, sneaks in a few more veggies, and makes the salad taste like a fiesta in your mouth! :) The lil bit o' ranch dressing gives it just enough creaminess to pull it together. It's pretty filling, with all those veggies and the chicken, AND it's pretty to look at. It's like a Christmas tree in a bowl: dark green background with ornamental nuggets of bright bell peppers, sunny corn, ruby red salsa, and black "lumps of coal" olives, haha. Even better, make extra chicken one night and this is fast and easy to prepare the next: just wash & chop the veggies, chop and throw the chicken in, open and dump the canned items in, then toss with the dressing. Get the kids involved in making a healthy dinner!
This cranberry relish has no added sugar. It's great with turkey for Thanksgiving and Christmas.
I use this salad as a quick add on to dinner, or if I need a lower calorie snack.

Delicious--it's the only way I can get my husband to eat broccoli! Make sure you use a sweet onion--a regular onion is sometimes too powerful. Sometimes I also run the broccoli stalks through the food processor and add them at the last step. You can also add nuts if you want.
