Boil shelled and deveined shrimp and allow to cool under ice. Boil, peel and chop eggs. Cut up shrimp and add to eggs. Mix together with mayo, ketchup, worcestershire sauce, salt, pepper, and splenda. I also sometimes add a bit of sweet pickle juice. After mixing well together, refrigerate until ready to serve on a bed of lettuce and/or with captain's wafers (remember to add wafers to the nutritional count). My husband likes to use my shrimp salad as a sandwich filling.
I got this recipe from a friend in Buenos Aires and have adapted it to suite my taste. Vinegar and I don't get along, but the honey in this recipe tempers the vinegar for me. Still, I cut it in half to get it right for my tastes. The recipe above reflects the higher amount for "normal" folks! Obviously seasonings can be substituted to reflect your taste.

You can prep all the components ahead of time, but don't toss the salad until just before serving. If you do the peanuts will lose their crunch because the cucumbers give off a good amount of water. If you use two chiles and leave the seeds/veins in - this is quite a spicy salad, so feel free to adapt for your tastes. You can just use one chile, and if you're still worried, remove the seeds and veins. It can be made vegan by substituting sunflower oil for the ghee.
More of a side dish for a heartier main course, this salad is light and tasteful when salt and a touch of cayenne are added. After eating, maybe some crumbled feta cheese to taste would be a great addition!

I'd recommend reducing the Bacon Pieces to about 1/4 of a cup, the same with the salad dressing. This is after I saw the calculation.
