I took an old favorite recipe of mine and tried to reduce the amount of sugar and sodium in it. Still very good and still a favorite of my husband's!
Quick, Light and Unbelievably Good. This is the old fashioned homemade sweet and sharp mayonnaise my mother used to make. Has a great consistency after it sets in the fridge. All of the pleasure and none of the guilt!
This is adapted from Dana Carpender's Low Carb Cole Slaw Recipe. I make it for everyone, low carb or not, and it's always a hit. I changed it from regular mustard to dijon (a BIG improvement in flavor) and from powdered Splenda to liquid sucralose.
Mayo and eggs and shrimps, oh my. I know it sounds like a recipe for a cholesterol meltdown instead of a superfood meltdown...but I don't eat eggs often (or shrimp)... The mayo is made from almond milk and ground sunflower seeds. The shrimp has glutathione and selenium (and they work best together) and is a good source of astaxanthin. It promotes satiety, is low cal and is a great source of protein and a wide array of essential nutrients. Sunflower seeds and almonds both provide high amounts of Vit E. The eggs give you that hard-to-get Vit D. The brewers yeast is high in absorbable chromium. And all the veggies in there speak for themselves.
Low fat, low sodium, great side. Serve with grilled chicken breast. Perfect picnic salad
Fresh cucumber, asparagus, orange pepper, tomato, avocado jalapeno lime creamy dressing.
Although it may sound disgusting, the flavors create a surprisingly tasty salad.
