At our favorite deli, there's a very pickly mayo free coleslaw that tastes good with everything. I recreated it to eat at home, and it's a great side dish to grilled foods, or sandwiches. I also like having a cup with diced chicken or a can of tuna mixed in, for lunch. It keeps about a week in the refrigerator, and it develops in flavor as it sits. I use a mandolin to shred all the ingredients right into the bowl. Sometimes I vary the seasonings with ginger and garlic, for an Asian flavor. It's great for a picnic, because it can be kept at room temp all day, and gets better with standing.
This salad has lots of crunch and flavor, with a little jalapeno heat, dressed with a lime vinaigrette. Wonderful for BBQ or potluck.
This is a salad I love in the summertime, I used what I had today but I usually throw in a yellow squash, and it's also great with asparagus or mushrooms
A twist of the usual recipe for Tabouli. There is no grain in here what so ever. You are using cauliflower in place of bulgar wheat.

It started with leftover brats and chicken breasts. The secret is FF Greek Yogurt instead of ranch or mayo. Add tons of fresh veggies chopped and sauteed. The pre-mixed seasonings help a lot too! use what ever meats you have, or leave them out! This recipe used a whole box of pasta, so it made a lot.
This is especially good on a low or no carb diet.
