I purchase the veggies all ready shredded and cut and just assemble this in just a few minutes.
I love black beans and edamame and this was the simplest way I could find to combine the two! It isn't a heavily flavored dish which is kind of nice, especially if you're having a really spicy meal and want something to compliment it.
