An earthy, tart tahini (ground sesame paste) dressing. Goes well on a roasted butternut squash and chickpea salad. Makes about 3/4 cup of dressing, or six 2-Tbsp servings.
What a healthy salad. Add other things to jazz it up. Sunflower seeds, rasins, cranberries, mandarian oranges, etc.
Very low in cholesterol.
