This is an oil free and sugar free recipe. The original recipe calls for 1 cup of oil and a quarter cup of sugar. The oil is replaced with 1 cup of water + 2 tablespoons of chia seeds. The sugar is replaced with monkfruit sweetener. The Xantham Gum is an emulsifier and a thickener but can be left out if desired.
