This meatloaf is rich in flavor and moist but holds its shape well. My youngest son was headed for a third slice last night. He didn't even notice how many veggies I had tucked into his meatloaf. :-) This recipe makes two loaves: one for tonight and one to freeze for next week. If you cook both, you have enough left for making meatloaf sandwiches for lunch during the week.
