Soak 1 bag (2 cups) dry Black beans for 6-8 hours. Cook for 1 hour, do not let the beans split.Mash or food process half of the beans after cooking. Put other half into slow cooker.
Grill onions in oil. Add tomatoes, spice mix ( half packet ) and 1.5 cups cooked black beans. Puree. Then add corn and remaining black beans and simmer for 10 minutes.
This soup is pretty easy to make. Yummy to eat, and low cost!
