This recipe came from a blog called Closet Cooking by Kevin Lynch. I tweaked it a little to better suite my dietary needs, and it is awesome!
This recipe is a new one for me and tastes a little bland as is, but I think it has a lot of potential and will be adding more spices the next time I make it
Found this on RR, but adapted it with fat free milk, extra garlic, extra zucchini, and dried spices, skipped the sauce, and cooked it on a griddle with pam

This recipe is an easy make-ahead meal that requires, wait for it...just FOUR ingredients!
I created this recipe some time ago and use it a lot since then with different variations. Love it.
An easy and quick to make zucchini fritter. Experiment by adding grated carrot or other veggies. Left overs heat perfectly in a warmed fry pan.
Make smaller for appetizer, or like this to serve with a side salad , and call it lunch or a light dinner.
Wonderful, guilt-free snack!
