I have done variations of this many times...Works on the grill too.Just put the veggies and chicken in foil and put it all on the grill. Tonight doing this with chicken breast tenderloins, zucchini, arrots, onion and sweet potato. I use olive oil in the foil. Season with a little salt, pepper etc...
