We loved this, but opted to serve it as 4-6 servings rather than 8. The ingredient proportions were perfect! We try to eat one vegetable and one fruit serving for breakfast along with a healthy portion of protein, so this recipe is perfect. (Excellent with ripe strawberries or cherry tomatoes_
