We do it with Gardein meatless crumbles and it is delicious. I do brown the onions and green pepper (use that instead of the Rotel) in a little olive oil and then add low salt diced tomatoes. One of our favorites and so easy! Add meatless crumbles at the end.
Very salty first time I made it. Second time made with a couple changes-- used no salt added beans to reduce the sodium and used frozen corn in place of the cream corn-- skipped the ranch mix and served with a dollop of fat free sour cream-- was definitely less salty-- will make again!
is there nutritional info for this soup if you don't use the ground beef
Sounds good. Would like to make it but hopefully could hold that sodium count down by getting the canned beans and tomatoes in a low or no sodium format. Not sure if they have ranch style dressing in low sodium version. My doc has me on a low sodium diet because of high blood pressure.
You can save 50 calories by substituting canned whole kernel corn or a cup of frozen corn kernels for the creamed corn. It also lowers the sugar in the recipe.
Too much sodium for me
Delicious recipe. I also prefer ground turkey - just for the flavor. We use regular canned corn to lower the sugar levels and I season with extra cumin.
This was pretty tasty! If you have the calories, a few tortilla chips (crumbled or strips) on top are a nice treat! :)
I am concerned over the high sodium content, any comments?
Looks wonderful, but seems like it would be high in sodium.
This recipe is a keeper. I followed it pretty closely, but my taste buds said it needs a little more salt and 'heat.' So, at the table, I added a sprinkle of Tony Chachere's Creole Seasoning, and that did the trick. I suspect this soup would be even better if chorizo replaced the beef. Next time?
