This was amazing! We're on a low carb diet and after eating this I almost felt guilty it tasted so good. Even my 19 year-old son who HATES cauliflower loved it and told me I need to make this more often.
I tried this because I love fried rice and it was adding way too many calories to my diet and I didn't really think this would work. But it is so awesome! I miss biting into the rice but the flavor is amazing and a great substitute!
I admit I was spectical, but this was really good - even my vegetable-hating 12 year old liked it. Because I had taken out hamburger for dinner, I mixed this with a pound of ground beef (cooked the ground beef first) and used real garlic instead of garlic salt.
Made this the other night w/a low carb shrimp and pea pod stir fry - It was so fabulous - this recipe is an absolute keeper!!!!
