Roasted green bean, turkey bacon and smoked Gouda frittata
Frittatas, or baked omelets, are easy, delicious and nutritious, and they can be adapted to almost any dietary needs or specific tastes with a quick swap of mix-ins. I chose to roast some green beans, fry up some turkey bacon and shred some smoked Gouda for this one. Yum! (I listed the frittata as vegetarian, although this one includes bacon, because most frittatas are made without meat.)
